Cupcake Craziness


Another baking blog today and as you probably guessed by the title I have been making cupcakes and I must say sorry about this title, I was trying to go for something funny but I think it has flopped spectacularly! Errr where was I, oh yeah, cupcakes! Yesterday I made two types of cupcakes as a present for my uncle, his favourite which is chocolate and I also made some lemon and poppy seed ones because they looked so good on the website. I used good food website for the recipes and I’ll link them below. But I really love these I think there so flavoursome, especially the lemon which is really zesty. I'm also finding an addiction to all the pretty and funky cupcake cases you can get, I’m building quite a collection now and I went for polka dot colours this time for a summery look. I iced the chocolate ones with a chocolate buttercream (different to what the recipe suggests) and a lemon buttercream for the lemon ones (obviously).  And that’s pretty much it, hope you enjoy and feel free to comment/re-blog etc., for more pictures (ones with icing on) go to my tumblr at http://lola1440.tumblr.com/.

No post. . .


OK so it’s been a little while since I posted and I thought while I was sat waiting around I ought to get back on it! Now I have been away this past week and that is the main reason I haven’t been posting, I was lucky enough to go to Italy for the week, which I shall be posting about later. Also my laptop keyboard broke to my utmost annoyance but hey ho I now have  a new one that attaches by USB and does mean I can type with my laptop on the side which I quite like! But anyway that’s all I wanted to say here and I best go as my cupcakes need to come out of the oven (my next post). Sorry again and ill blogging soon,

Crazy Coconut Bars


Today I made some quick but healthy choccy bars! The recipe is from tone it up dot com, and taste amazing. There made from dark chocolate and coconut with a little honey (and almonds if you like). I didn’t have all the right ingredients so made a few changes and think there still pretty awesome! I have put my version of the recipe below if anyone makes them please let me know in the comments.

Recipe:

    400g dark chocolate
    1/2 cup desiccated coconut
    1/4 cup almonds
    1/4 cup olive oil (flavourless)
    2 tablespoons honey

Melt chocolate in a microwave or on the stove.
Pour a spoonful of chocolate over the bottom of a mould (if you don’t have a mould silicon cupcake cases wok well too)
Place the mould in freezer for 10 minutes to allow chocolate to harden
In a small bowl, combine shredded coconut, oil and honey
Remove mould from freezer
Fill chocolate lined moulds with coconut mixture & an almond
Paint chocolate over coconut mixture to cover bars
Place in freezer for 10 minutes to harden
Remove from freezer, turn mould upside down and pop mounds out of mould
Serve and share with friends!

Book Review


Not quite sure whether this post fits with the blog theme but thought I’d pop it in any way! So a book review today. I just finished reading chocolate shoes and wedding blues by Trisha Ashley, it’s a very typical chick flick book, but a great easy read especially on a sun lounger while on holiday this year. The story is about a woman reaching the end of her younger years and time when she can have children but without her fiancĂ©e or children which she desperately want. The lead is a great character and feels much more real than a lot of chick flick characters, she loves baking, eating and shoes! A girl with great taste hehe! However you can see where the story is going right from the blurb, it’s definitely not for those wanting a intellectual read. Despite the predictability though I think I’d be disappointed if the story didn’t go the way it does and there are a few surprise twists. This is the first book I’ve read by Ashley and I’ll be reading more for sure! Well written idealistic rom com!

Girls Night In

As a very typical girly girl I love a girly night in. What with the rubbish weather at the moment and the fog creating an almost wintery feel me and my girlfriends decided to have a classic girls night in and good old gossip! A couple bottles of red wine, chick flicks, chocolate and Jim jams – a great night in my opinion. Nothing quite like the classics like pretty women and a jumbo bar of galaxy to put me in a good mood! And that’s all for tonight, just a quick one!
